POSITION SUMMARY: Oversees and participates in the preparation and cooking of foods for patients, residents, cafeteria and contracted services.

Essential Duties and Responsibilities:
  1. Confirms and assists in food production for patients, residents, employees and organization special functions.
  2. Plans, assigns and directs work of staff.
  3. Prepares food for cafeteria, special functions and replenishes food items for cafeteria as needed.
  4. Investigates and takes appropriate actions to resolve department and personnel problems. Notifies Dietary Director when appropriate.
  5. Interviews, hires, and orients new employees.
  6. Analyzes recipes to assign prices to menu items based on food and overhead costs.
  7. Coordinates catering functions.
  8. Assists Dietician with menu planning.
  9. Determines appropriate amounts of food to prepare to avoid shortages and waste.
  10. Maintains record of daily cafeteria money deposits
  11. Follows safe food handling practices and is Serv Safe Certified. Active knowledge of State of Wisconsin and Federal food code.
  12. Conducts resident nutrition assessments and documents according to policies and procedures.
  13. Assure proper cleaning and sanitation is conducted per department protocol.
  14. Documents all information required to meet HACCP, food code and department expectsion guidelines.
  15. Performs cost analysis on current/future vendors, special projects, equipment needs, etc.
  16. Serves as a mentor for employees, providing staff education as needed
  17. Assists staff with assembling patient/resident trays and serving employees
  18. Develops departmental policies and procedures under the supervision of the Dietary Director.
  19. Oversees entire Dietary department in absence of Dietary Director
  20. Performs other duties as assigned and performs other positions within the department. On call after hours and weekends as needed to maintain department operations.
  21. Performs other positions within the department as needed.
Educational Qualifications:
  • Associates degree in Hotel and Restaurant Management or related field. Bachelors degree preferred.
  • Completion of Dietary Managers Program and Certification by Association of Nutrition and Foodservice Professionals.
  • Two years related experience.
  • Supervisory and management skills and training required.
  • ServeSafe certification.
  • Knowledgeable in modified diets, selective menus and production sheets.
  • Strong catering skills required.
  • Computer proficiency preferred.

Work Relationship:
  • Reports directly to the Dietary Director.
  • Works closely with all Dietary employees.
  • Regular contact with patients, residents, visitors and all organization employees.

Working Conditions:
  • Work is performed largely in a pleasant hospital or nursing home environment with minimal chance for personal injury.
  • Occasionally works near moving mechanical parts.
  • Occasionally exposed to wet and/or humid conditions, toxic or caustic chemicals, extreme cold, extreme heat, and risk of electrical shock.
  • Occasionally has exposure to hazardous material such as needle punctures and exposure to blood and body fluids.
  • The noise level in the work environment is usually moderate.

Physical Requirements:
  • Frequently required to stand, walk, stoop, kneel or crouch.
  • Occasionally required to sit or climb.
  • Required to use hands to handle or feel objects, tools or controls.
  • Frequently required to lift and/or move up to 25 pounds.
  • Occasionally required to lift and/or move up to 50 pounds of department supplies and equipment.
  • Occasionally may need to move supplies or equipment over 75 pounds.
  • Requires specific vision abilities for far vision, near vision, depth perception, colors, accommodation and peripheral vision.
  • Vision correctable to 20/40.
